Here&#8217;s a simple recipe to make Pav Bhaji:<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul>\n<li>4 medium-sized potatoes, boiled and mashed<\/li>\n\n\n\n<li>1 cup mixed vegetables (such as cauliflower, carrots, peas, bell peppers), finely chopped<\/li>\n\n\n\n<li>1 large onion, finely chopped<\/li>\n\n\n\n<li>2 tomatoes, finely chopped<\/li>\n\n\n\n<li>2-3 green chilies, finely chopped<\/li>\n\n\n\n<li>1-inch piece of ginger, grated<\/li>\n\n\n\n<li>4-5 garlic cloves, minced<\/li>\n\n\n\n<li>1 tablespoon pav bhaji masala (available in Indian grocery stores)<\/li>\n\n\n\n<li>1 teaspoon red chili powder<\/li>\n\n\n\n<li>1\/2 teaspoon turmeric powder<\/li>\n\n\n\n<li>Salt to taste<\/li>\n\n\n\n<li>2 tablespoons butter<\/li>\n\n\n\n<li>Fresh coriander leaves, chopped<\/li>\n\n\n\n<li>Juice of 1 lemon<\/li>\n\n\n\n<li>8 pav buns<\/li>\n\n\n\n<li>Butter for toasting the buns<\/li>\n<\/ul>\n\n\n\n<p>For garnish:<\/p>\n\n\n\n<ul>\n<li>Finely chopped onions<\/li>\n\n\n\n<li>Fresh coriander leaves<\/li>\n<\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol>\n<li>Heat butter in a large pan or kadhai over medium heat. Add chopped onions and saut\u00e9 until they turn translucent.<\/li>\n\n\n\n<li>Add grated ginger, minced garlic, and green chilies. Saut\u00e9 for a minute until the raw aroma disappears.<\/li>\n\n\n\n<li>Add chopped tomatoes and cook until they turn soft and mushy.<\/li>\n\n\n\n<li>Now, add the mixed vegetables to the pan and mix well. Cook for a few minutes until the vegetables are partially cooked. You can add a little water to aid the cooking process.<\/li>\n\n\n\n<li>Add the mashed potatoes and mix everything together. Mash the vegetables and potatoes with the back of a spoon or a masher to get a uniform consistency.<\/li>\n\n\n\n<li>Sprinkle pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well to combine all the spices and cook for a few more minutes.<\/li>\n\n\n\n<li>Add a little water to adjust the consistency of the bhaji. Simmer for 10-15 minutes on low heat, allowing the flavors to meld together. Stir occasionally.<\/li>\n\n\n\n<li>While the bhaji is simmering, heat a griddle or tawa. Slit the pav buns horizontally, keeping one side intact.<\/li>\n\n\n\n<li>Spread butter on the heated griddle and toast the pav buns on both sides until they turn golden brown and crispy.<\/li>\n\n\n\n<li>Once the bhaji is cooked, add chopped coriander leaves and lemon juice. Mix well and turn off the heat.<\/li>\n\n\n\n<li>Serve the hot and spicy Pav Bhaji in a plate, garnished with finely chopped onions and coriander leaves.
