It is steamed and typically served with chutney. Here&#8217;s a basic recipe for making dhokla:<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul>\n<li>1 cup besan (chickpea flour)<\/li>\n\n\n\n<li>1\/2 cup yogurt<\/li>\n\n\n\n<li>1\/2 cup water<\/li>\n\n\n\n<li>1 tablespoon ginger-green chili paste<\/li>\n\n\n\n<li>1 teaspoon lemon juice<\/li>\n\n\n\n<li>1\/2 teaspoon turmeric powder<\/li>\n\n\n\n<li>1\/2 teaspoon salt (or to taste)<\/li>\n\n\n\n<li>1 teaspoon Eno fruit salt (or 1\/2 teaspoon baking soda)<\/li>\n\n\n\n<li>1 tablespoon oil<\/li>\n\n\n\n<li>1 teaspoon mustard seeds<\/li>\n\n\n\n<li>A pinch of asafoetida (hing)<\/li>\n\n\n\n<li>2-3 green chilies, slit<\/li>\n\n\n\n<li>A few curry leaves<\/li>\n\n\n\n<li>Fresh coriander leaves, chopped (for garnishing)<\/li>\n\n\n\n<li>Grated coconut (for garnishing)<\/li>\n\n\n\n<li>Sev (thin gram flour noodles) (for garnishing)<\/li>\n<\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol>\n<li>In a mixing bowl, add besan, yogurt, water, ginger-green chili paste, lemon juice, turmeric powder, and salt. Mix well to form a smooth batter. Make sure there are no lumps in the batter. Set it aside for 15-20 minutes to allow it to ferment.<\/li>\n\n\n\n<li>After the batter has fermented, add Eno fruit salt (or baking soda) to the batter and mix gently. The batter will become frothy.<\/li>\n\n\n\n<li>Grease a steamer plate or a round cake pan with oil.<\/li>\n\n\n\n<li>Pour the batter into the greased plate or pan. Fill it up to about 3\/4th of the plate, leaving room for the dhokla to rise.<\/li>\n\n\n\n<li>Heat water in a steamer or a large pot. Place the plate or pan with the batter in the steamer and cover it with a lid.<\/li>\n\n\n\n<li>Steam the dhokla on medium heat for about 15-20 minutes or until a toothpick inserted into the dhokla comes out clean. Make sure not to overcook it, as it can become dry.<\/li>\n\n\n\n<li>Once the dhokla is cooked, remove it from the steamer and let it cool for a few minutes.<\/li>\n\n\n\n<li>In a small pan, heat oil and add mustard seeds. Allow them to splutter. Then add asafoetida, green chilies, and curry leaves. Saut\u00e9 for a few seconds.<\/li>\n\n\n\n<li>Pour this tempering over the dhokla and spread it evenly.<\/li>\n\n\n\n<li>Cut the dhokla into desired shapes (squares or diamonds) using a knife.<\/li>\n\n\n\n<li>Garnish with freshly chopped coriander leaves, grated coconut, and sev.<\/li>\n<\/ol>\n\n\n\n<p>Your dhokla is ready to be served. It can be enjoyed with green chutney, tamarind chutney, or even as it is.
