Pav Bhaji is a popular Indian street food dish that consists of a spicy vegetable curry (bhaji) served with buttered pav buns. It’s a delicious and satisfying dish. Here’s a simple recipe to make Pav Bhaji:

Ingredients:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 cup mixed vegetables (such as cauliflower, carrots, peas, bell peppers), finely chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • 4-5 garlic cloves, minced
  • 1 tablespoon pav bhaji masala (available in Indian grocery stores)
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons butter
  • Fresh coriander leaves, chopped
  • Juice of 1 lemon
  • 8 pav buns
  • Butter for toasting the buns

For garnish:

  • Finely chopped onions
  • Fresh coriander leaves

Instructions:

  1. Heat butter in a large pan or kadhai over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Add grated ginger, minced garlic, and green chilies. Sauté for a minute until the raw aroma disappears.
  3. Add chopped tomatoes and cook until they turn soft and mushy.
  4. Now, add the mixed vegetables to the pan and mix well. Cook for a few minutes until the vegetables are partially cooked. You can add a little water to aid the cooking process.
  5. Add the mashed potatoes and mix everything together. Mash the vegetables and potatoes with the back of a spoon or a masher to get a uniform consistency.
  6. Sprinkle pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well to combine all the spices and cook for a few more minutes.
  7. Add a little water to adjust the consistency of the bhaji. Simmer for 10-15 minutes on low heat, allowing the flavors to meld together. Stir occasionally.
  8. While the bhaji is simmering, heat a griddle or tawa. Slit the pav buns horizontally, keeping one side intact.
  9. Spread butter on the heated griddle and toast the pav buns on both sides until they turn golden brown and crispy.
  10. Once the bhaji is cooked, add chopped coriander leaves and lemon juice. Mix well and turn off the heat.
  11. Serve the hot and spicy Pav Bhaji in a plate, garnished with finely chopped onions and coriander leaves. Serve with the toasted pav buns.
